In collaboration with the well-known Narru Restaurant in Donostia and the Diario Vasco in its gastronomic space, we present BESTIA PARDA within an atypical wine profile, from the Verdejo variety. From our old vineyards on the purest gravel in the heart of La Seca, we produce a wine aged in a selection of oak from the forests of northern France with a long maturation and a careful rest in the cellar until it reaches its optimum moment.
We chose the 2017 vintage, nowadays only available in the Bodega's reserves, as a reflection of the personality and delicious evolution it shows over time, moving away from the classic notes offered by Verdejo in its more commercial productions. "DEEP AND SERIOUS" the sommelier explain us.
Apart from having a wide range of food pairings combinations, the sommeliers highlight its more than perfect pairing with various types of meat, thus breaking the myth that whites do not pair well with this part of the gastronomy.
Our suggestion, as one of the sommeliers points out, would be some lamb chops with vine shoots, very typical of our area!
